Beijing Roast Duck
Peking Duck, or Beijing Roast Duck is a famous duck dish from Beijing. that has been prepared since the imperial era, and is now considered one of China's national foods. Many consider the great wall and the Beijing duck are the must when visit to Beijing.
(The English word Peking and Beijing has the same meaning in Chinese. Many years ago, the southern Chinese were the first came to North America and �Peking� was based on the Cantonese pronunciation. Since Mao founded the modern and Mandarin is uses as the official Chinese language and Beijing is from the mandarin pronunciation.)
The dish is prized for the thin, crisp skin, with authentic versions of the dish serving mostly the skin and little meat, sliced in front of the diners by the cook. Ducks were bred specially for the dish are slaughtered after 65 days and seasoned before being roasted in a closed or hung oven. The meat is eaten with pancakes, spring onions, and hoisin sauce or sweet bean sauce.
Many restaurants here from the high-end ones to the little local restaurants all offer the duck dish. Yesterday, I walked by a restaurant which specializes in the Beijing duck, there was a long line up outside. The super market I goes to even have a whole displays of Beijing Duck in vacuumed bag not unlike the large potato- chip bag we have back home. In the tourist area, I seen many carry those fancy bags with the words Beijing roast duck on it.
